Essential nutrients. Lipids

Fats, or lipids, perform five important functions:

  1. They are a source of energy.
  2. They are a vehicle for liposoluble vitamins: A, D, E and K.
  3. They form part of cell structures.
  4. They influence the blood lipid levels and, therefore, the cardiovascular risk.
  5. They contribute to the good flavour of foods.

Each gram of fat provides 9 kilocalories, very much higher than the 4 kilocalories that a gram of protein or carbohydrate provides. For this reason, it is recommended that they be consumed in moderation.

The following table shows us the content of this nutrient in different foods.

Oil, butter, margarine or lard are the “fattiest” foods in the diet, but it shouldn’t be forgotten that milk and its derivatives, meats, fish and eggs also supply our body with this nutrient.
