Tomato tartar, capers, pickles, honey and basil
What you need
Bicentury 6 Seeds & Cereals Corn cakes
Ripe tomato
Worchester Sauce
Tabasco
Mustard Cream
Honey
Basil
Capers
Pickle
Salt
Black Pepper
How it is made
Peel the tomato and dice it with the pickle and capers.
Mix all the ingredients in a bowl and put them on top of the Bicentury 6 Seeds and Cereals corn cake.
Decorate with a few basil leaves.
Light milk foam, chocolate chips, hazelnut and kumquat
What you need

Skim milk
Gelatin sheets
80% Cocoa chocolate
Kumquat or orange peel
Toasted Hazelnuts
How it is made
To make the foam heat the milk and mix it with the previously hydrated with cold water gelatin.
Place a siphon with two loads and leave it in the fridge during 6 hours.
To plate, put the milk foam on top of the Bicentury 6 Seeds & Cereals rice cake, grate the chocolate, cut hazelnuts, kumquat peel and add the chocolate chips.
Salmon and nori seaweed textures
What you need
Bicentury 6 Seeds & Cereals Rice cakes
Curated salmon
Salt
Soy Sauce
Lime
Tabasco
Egg Yolk
Chives outbreaks
Salmon eggs
Dry Seaweed
Mineral Water
Soy lecithin
How it is made
Dice the salmon, add the egg yolk with the soy sauce and the lime scrape and some of it juice.
Add tabasco drops as you like and mix with all the ingredients.
For the seaweed air: Put in a tall recipient mineral water with the nori seaweed, the soy lecithin and mix with the turmix, brew to get rid of the seaweed excess and mix again with the turmix until the air appears. Let it rest until the plate moment.
Place the salmon tartar on the top of the Bicentury 6 Seeds & Cereals cake, decorate with the chives out brakes, salmon egg, nori seaweed and a spoon of air.
